Grapefruit & Thyme Spritz

Thyme syrup:

1 part honey

1 part sugar

2 parts water

1 sprig of thyme, chopped

Drink:

Grapefruit juice, freshly squeezed

Thyme syrup

Soda water

Crushed Ice

Thyme sprigs & grapefruit slices to serve

To prepare the thyme syrup: Combine the honey, sugar, water and thyme in a saucepan and bring to the boil on a medium heat. Simmer until the sugar has dissolved. Remove from the heat and sieve to remove the thyme. Cover and cool.

To prepare the drink: In a glass filled with crushed ice, pour 2 parts grapefruit juice to 1 part soda water. Add 2 tablespoons of thyme syrup, and garnish with thyme and grapefruit slices.

Iced Turmeric & Orange Infusion (4 SERVINGS)

1 teaspoon turmeric powder

1 inch ginger, peeled and thinly sliced

Fresh mint

2 glasses of water

Orange juice, freshly squeezed

Ice

Orange slices to serve

Pour 2 glasses of water into a saucepan and add the turmeric and ginger. Bring to the boil, then add the mint and simmer for 10 minutes. Cover and cool. 

In an ice-filled glass, pour 2 parts of the mixture to 1 part freshly squeezed orange juice. Garnish with a slice of orange and a sprig of mint.

Rhubarb & Elderflower Tonic

Rhubarb syrup:

1 large rhubarb stalk, chopped

1/2 cup sugar

Water to cover

Drink:

Elderflower cordial

Rhubarb syrup

Lemon juice, freshly squeezed

Tonic water

Ice

Shaved rhubarb to serve

To prepare the rhubarb syrup: Place the chopped rhubarb and sugar in a saucepan and cover with water. Simmer over a medium heat until the mixture is pink and syrupy. Cover and cool, then blend to obtain a smooth syrup.

To prepare the drink: In an ice-filled glass, pour 1 part elderflower cordial to 3 parts rhubarb syrup and 3 parts tonic water. Add a drop of lemon juice, stir to chill, and garnish with shaved rhubarb.

Strawberry & Ginger Lemonade (4 servings)

Strawberry water:

Handful of strawberries, chopped

2 glasses of water

Ginger syrup:

1 inch ginger, peeled and thinly sliced

1 cup sugar

1 cup water

Ginger lemonade:

Lemon juice, freshly squeezed

Ginger syrup

Water

Drink:

Strawberry water

Ginger lemonade

Crushed ice

Strawberries to serve

To prepare the strawberry water: Steep the strawberries in water overnight. Once the water is bright red, strain and chill. 

To prepare the ginger syrup: Place the sliced ginger and sugar in a saucepan and cover with water. Simmer over a medium heat until the mixture is syrupy. Cover and cool. 

To prepare the ginger lemonade: Mix 1 part lemon juice to 1 part ginger syrup and 2 parts water.

To prepare the drink: In a glass filled with crushed ice, pour 3 parts ginger lemonade to 1 part strawberry water. Garnish with a whole strawberry.
